Letter From the Editor

I sit at my computer trying to put together our monthly news letter.  I have just finished watching the Sunday TV broadcast of " A Prayer For America" in New York.  The leaders of this great country have asked us to try to start to put our lives back to normal.  Our sons and daughters are going off to war.  Our economy is in some trouble.  Many of us are facing tough economic times. What can I say that will be meaningful?  This is what I, and my colleges in the dietary and health profession feel.
 
As we start to put our lives back together; as we try to help our families, our neighbors, our colleagues; this is also the time help ourselves.  To become healthy, to make a commitment to diet and exercise so that we will be strong, physically and mentally, and able to help our country in any way we are asked.  I do not just say this to USA citizens, but to the citizens of the world.  If we are to combat evil and terrorism, we will need to be stronger then we have ever been before.
 
So make a commitment with me!!  We will eat healthy, exercise regularly, and refresh ourselves mentally and spiritually, so that we will be strong in the days to come.

More Americans Going Meatless

(NAPS)--It appears Mom was right. Eating more vegetables is a delicious way to achieve good health. To the delight of animals everywhere, more Americans are cutting back on meat, fish and poultry. Some people also exclude dairy products and eggs.

Not crazy about brussel sprouts or broccoli? Never fear. The options for people eager to explore a more plant-centered diet are more varied now than ever before.

The sale of meat substitutes totaled $250 million, and is projected to surpass $1 billion by next year. The whopping 48 percent growth rate of meat analogs has made it among the top ten fastest growing categories in U.S. supermarkets.

Who buys meat substitutes? The answer might surprise you. Eighty percent of shoppers polled did not consider themselves strict vegetarians. Still, the value of eating a more plant-centered diet is difficult to dispute.

The American Dietetic Association's position paper on vegetarian diets reports that "scientific data suggest positive relationships between diets containing vegetables and reduced risk for several chronic, degenerative diseases and conditions, including obesity, coronary artery disease, hypertension, diabetes mellitus, and some types of cancer."

While the health benefits of eating more fruits and vegetables may be most obvious to older consumers, young adults are also turning to more plant-based foods. The National Restaurant Association reports that, on any given day, nearly 15 percent of U.S. college students select a vegetarian option in their dining halls.

No matter what your age, plant protein, which makes up the bulk of most meat substitutes, has many advantages over animal protein. It is lower in fat, high in fiber and has no cholesterol. Soy protein, arguably the most popular and versatile of the meat substitutes, is itself an excellent source of all nine essential amino acids. In addition, soy protein is packed with isoflavones which are recognized for preventing breast and prostate cancers. The federal Food and Drug Administration recommends that consumers eat at least 25 grams of soy protein a day.

Not only can you help yourself by eating plant-based foods, but changing what you eat--or don't eat--can also help protect animals.

A delicious vegetarian burger

Serves 1.0 • **May use vegan cheese!!

315.40 Calories per serving. • PCF Ratio: 24-39-37

Protein per serving: 19.56 g • Carbohydrate per serving: 31.56 g • Fat per serving: 13.54 g

Ingredients:

1 large - PORTABELLO MUSHROOM, RAW, Mushroom, portabello, raw

1 tsp - OLIVE OIL, EXTRA VIRGIN

1 oz - CHEDDAR CHEESE, natural, mild, reduced fat "Light Naturals"

1/8 cup - ONION, RAW, Onions, raw

1 slice - TOMATO, RAW, SLICE, Tomatoes, red, ripe, raw, June thru October average

1 leaf (medium) - BUTTERHEAD LETTUCE, RAW, includes Boston & Bibb types

1 bun - HAMBURGER BUN, WHOLE GRAIN

 

Recipe Directions:

Saute 1 large portabello mushroom cap in nonstick skillet in 1 tsp olive oil. Top with **cheese, tomato slice, lettuce, and onion. Serve on 2-oz whole-grain bun.
