Preparation
time: 15 minutes; cooking time: less than 2 minutes.

teaspoon olive oil
½
cup
chopped onion
1
clove minced garlic
3
cups water
1
(14½-ounce) can fat-free chicken
broth
¾
cup whole kasha
2
(4½-ounce) cans chopped green chilies
2
teaspoons chili powder
1
teaspoon cumin
2
cups chopped cooked (leftover) turkey
2
(15-ounce) cans rinsed and drained white beans
Hot
sauce
Reduced-fat
sour cream and
shredded
Monterey Jack cheese
Heat
oil in a Dutch oven on medium. Cook onion and garlic 3 minutes or until
softened. Add water, broth. kasha, chilies, chili powder and cumin. Bring to
boil; reduce heat to low. Cover and simmer 15 minutes or until kasha is tender.
Stir in cooked turkey and beans; cook 5 minutes until heated through. Season to
taste with several dashes of hot sauce. Serve with sour cream and cheese. Makes
4 servings.
