Secrets of the Mediterranean Diet
The secret of the Mediterraneans lifelong health

Researchers have discovered that people in the countries that border the Mediterranean Sea exhibit strikingly low rates of heart disease compared to Americans and others. Extensive research in the past few years has isolated key dietary habits as a vital part of the vicinities lower rates of chronic disease.

The traditional diets of the Mediterranean region were mainly based on the foods from a rich diversity of plant sources and included fruits, vegetables, whole grains, beans, nuts and seeds.   Olive oil, high in monounsaturated fat is a good source of antioxidants and is the area's principle source of fat.  Researchers suggest that the live bacterial cultures of yogurt may also have contributed to the regions good health.  

Throughout the Mediterranean wine is drunk in moderation and usually taken with meals For men moderation is two glasses per day, for women moderation is one glass per day.
 
There is a general consensus among health professionals that the Mediterranean Diet is healthier than the North European and American diet because more grains, such as spaghetti, fruits, vegetables, legumes, nuts, and olive oil are consumed.  Moderate amounts of fish and cheese and very little red meat is consumed.

Key features of the Mediterranean diet:

Valentine's Day Desserts for Chocolate Lovers

Healthy eating is still possible--and quite luscious--on Valentine's Day! Make this enticing chocolate dessert and you can indulge your passion for chocolate, as well as show you care about your loved one's health.

Chocolate Banana Pate

Makes 8 Servings

1 envelope unflavored gelatin

1/4 cup unsweetened cocoa powder

1/4 cup granulated sugar

1 tablespoon honey

2 very ripe medium bananas

3/4 cup plain nonfat yogurt

2 teaspoons vanilla extract

1 cup whipped topping

2 1/4 cups fresh or thawed frozen

raspberries

1 tablespoon cornstarch

1/3 cup pineapple juice

 

Line an 8" loaf pan with aluminum foil; set aside.

In small saucepan, sprinkle gelatin over 1/2 cup cold water; let stand 2 minutes. 

Stir in cocoa, 2 tablespoons of the sugar and the honey; cook, stirring constantly, 4-5 minutes,

until gelatin is dissolved. 

Remove from heat; let cool.

In medium bowl, mash bananas until very smooth. 

Stir in yogurt, gelatin mixture and vanilla; gently fold in whipped topping. 

Spoon into prepared pan and freeze until firm, about 8 hours.

Meanwhile, in small saucepan, combine raspberries and the remaining 2 tablespoons sugar; bring to a boil, stirring to crush berries. 

In small bowl, dissolve cornstarch in pineapple juice. 

Add to saucepan; stir to mix well. 

Cook 30-40 seconds, until thick. 

Strain through a fine mesh sieve; cool completely.

To serve, remove pate from pan; peel off foil. 

Cut into 1/2"-thick slices; serve with raspberry sauce

EACH SERVING PROVIDES: PER SERVING: 136 Calories, 3 g Protein, 3 g Fat,

20 mg Sodium, 0 mg Cholesterol
